Description

Delicious gluten-free Zucchini-Bagels with a soft texture and golden crust, perfect for breakfast or as a snack.


Ingredients

  • 2 cups grated zucchini
  • 1 cup almond flour
  • 1/2 cup cheese (e.g., mozzarella or cheddar)
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 190°C and line a baking sheet with parchment paper.
  2. Prepare the zucchini by squeezing out as much liquid as possible using a kitchen towel.
  3. Mix in a large bowl the drained zucchini, almond flour, cheese, eggs, baking powder, garlic powder, onion powder, salt, and pepper until well combined.
  4. Form the mixture into round shapes on the baking sheet to resemble bagels.
  5. Bake the bagels for about 20-25 minutes or until golden brown.
  6. Cool briefly before serving with toppings of your choice.

Notes

Ensure to remove excess liquid from the zucchini for the right consistency. Feel free to experiment with different cheeses for a unique flavor.
