Description

A vibrant and flavorful taco bowl featuring roasted sweet potatoes, seasoned ground beef, fresh pico de gallo, and creamy guacamole.


Ingredients

  • 4 cups Sweet Potatoes (Cubed)
  • 2 tablespoons Olive Oil (Or avocado oil)
  • 1 teaspoon Smoked Paprika (Or regular paprika)
  • Salt and Pepper to taste
  • 1 pound Ground Beef (Or turkey, chicken, or black beans)
  • 2 tablespoons Taco Seasoning
  • 1 cup Pico de Gallo
  • 1 cup Guacamole
  • 1/2 cup Sour Cream (Or Greek yogurt)
  • Optional Toppings: Crumbled cheese, lime wedges, crunchy tortilla chips

Instructions

  1. Preheat the Oven: Set your oven to 425°F (220°C).
  2. Prepare Sweet Potatoes: Toss cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper in a mixing bowl.
  3. Roast: Spread the sweet potato cubes in a single layer on a baking sheet and roast for 25–30 minutes.
  4. Cook the Protein: In a skillet over medium heat, add ground beef and cook until browned. Stir in taco seasoning.
  5. Prepare Toppings: Chop tomatoes, onion, and cilantro for pico de gallo, and mash avocado with lime juice for guacamole.
  6. Assemble the Bowls: Start with roasted sweet potatoes, add seasoned protein, pico de gallo, guacamole, and sour cream.
  7. Garnish & Serve: Finish with optional toppings and serve immediately.
