- 2 tablespoons Olive Oil (Or avocado oil)
- 1 teaspoon Smoked Paprika (Or regular paprika)
- Salt and Pepper to taste
- 1 pound Ground Beef (Or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning
- 1 cup Pico de Gallo
- 1 cup Guacamole
- 1/2 cup Sour Cream (Or Greek yogurt)
- Optional Toppings: Crumbled cheese, lime wedges, crunchy tortilla chips
Instructions
- Preheat the Oven: Set your oven to 425°F (220°C).
- Prepare Sweet Potatoes: Toss cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper in a mixing bowl.
- Roast: Spread the sweet potato cubes in a single layer on a baking sheet and roast for 25–30 minutes.
- Cook the Protein: In a skillet over medium heat, add ground beef and cook until browned. Stir in taco seasoning.
- Prepare Toppings: Chop tomatoes, onion, and cilantro for pico de gallo, and mash avocado with lime juice for guacamole.
- Assemble the Bowls: Start with roasted sweet potatoes, add seasoned protein, pico de gallo, guacamole, and sour cream.
- Garnish & Serve: Finish with optional toppings and serve immediately.
