- 8 Pineapple Rings
- 1 Cup Dark Rum
- 1 Cup Coconut Rum
- 1 ½ Cups All-Purpose Flour
- 10-oz. Bag Sweetened Coconut Flakes
- 2 Large Eggs
- ½ Cup Coconut Milk
- Vegetable Oil for Frying
- 4 oz. Cream Cheese, Softened
- ½ Cup Powdered Sugar
Instructions
- Soak the pineapple: In a medium bowl, place the pineapple rings and cover them with dark rum and coconut rum. Let these soak for at least 1 hour.
- Pat and prep: After soaking, gently pat the pineapple rings dry with a paper towel.
- Prepare coatings: In three shallow bowls, fill one with flour, the second with a whisked mixture of eggs and coconut milk, and the third with sweetened coconut flakes.
- Coat the pineapple: Dip each ring into the flour, then the egg mixture, and finally coat with coconut flakes.
- Fry to perfection: Heat vegetable oil in a deep pot to 350°F (175°C). Fry the pineapple rings for about 1 minute per side.
- Make the dipping sauce: Mix softened cream cheese with powdered sugar and reserved rum until smooth.
Notes
For the best results, use fresh pineapple. Customize the dipping sauce by adding vanilla or cinnamon.
