Description

  • 8 Pineapple Rings
  • 1 Cup Dark Rum
  • 1 Cup Coconut Rum
  • 1 ½ Cups All-Purpose Flour
  • 10-oz. Bag Sweetened Coconut Flakes
  • 2 Large Eggs
  • ½ Cup Coconut Milk
  • Vegetable Oil for Frying
  • 4 oz. Cream Cheese, Softened
  • ½ Cup Powdered Sugar

Instructions

  1. Soak the pineapple: In a medium bowl, place the pineapple rings and cover them with dark rum and coconut rum. Let these soak for at least 1 hour.
  2. Pat and prep: After soaking, gently pat the pineapple rings dry with a paper towel.
  3. Prepare coatings: In three shallow bowls, fill one with flour, the second with a whisked mixture of eggs and coconut milk, and the third with sweetened coconut flakes.
  4. Coat the pineapple: Dip each ring into the flour, then the egg mixture, and finally coat with coconut flakes.
  5. Fry to perfection: Heat vegetable oil in a deep pot to 350°F (175°C). Fry the pineapple rings for about 1 minute per side.
  6. Make the dipping sauce: Mix softened cream cheese with powdered sugar and reserved rum until smooth.

Notes

For the best results, use fresh pineapple. Customize the dipping sauce by adding vanilla or cinnamon.
