Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the eggs, milk, salt, and pepper in a large mixing bowl until fluffy.
- Grease a 9×13 inch baking dish with olive oil.
- Spread diced vegetables evenly across the bottom of the dish.
- Pour the egg mixture over the vegetables.
- Bake for 25-30 minutes, or until the eggs are set and golden.
- Allow to cool slightly, then slice into squares.
