Description

A comforting dish of layered zucchini and ricotta, enhanced with marinara sauce and topped with mozzarella cheese.


Ingredients

Scale
  • 2 medium zucchinis, sliced
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Layer half of the zucchini slices evenly across the bottom of a baking dish.
  3. Dollop and spread half of the ricotta cheese over the zucchini.
  4. Pour half of the marinara sauce over the ricotta.
  5. Repeat with the remaining zucchini, ricotta, and marinara sauce.
  6. Generously sprinkle shredded mozzarella over the top.
  7. Drizzle olive oil over the cheese, and season with salt and pepper.
  8. Bake for 25-30 minutes until the zucchini is tender and the cheese is bubbly and golden.
  9. Cool for a few minutes and garnish with fresh basil before serving.

Notes

Make layers ahead of time and refrigerate. Can be customized with other vegetables or spices.
