Description
A comforting dish of layered zucchini and ricotta, enhanced with marinara sauce and topped with mozzarella cheese.
Ingredients

- 2 medium zucchinis, sliced
- 1 cup ricotta cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Layer half of the zucchini slices evenly across the bottom of a baking dish.
- Dollop and spread half of the ricotta cheese over the zucchini.
- Pour half of the marinara sauce over the ricotta.
- Repeat with the remaining zucchini, ricotta, and marinara sauce.
- Generously sprinkle shredded mozzarella over the top.
- Drizzle olive oil over the cheese, and season with salt and pepper.
- Bake for 25-30 minutes until the zucchini is tender and the cheese is bubbly and golden.
- Cool for a few minutes and garnish with fresh basil before serving.
Notes
Make layers ahead of time and refrigerate. Can be customized with other vegetables or spices.
