Description

These delightful muffins blend sweet-tart cherries with a crunchy streusel topping, perfect for breakfast or any occasion.


Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs

  • 1 1/2 cups fresh cherries, pitted and halved
  • 1/2 cup brown sugar (for streusel)
  • 1/4 cup all-purpose flour (for streusel)
  • 1/4 cup rolled oats
  • 1/4 cup unsalted butter, softened (for streusel)
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Mix melted butter, milk, eggs, and vanilla in another bowl until frothy.
  4. Pour the wet mixture into the dry ingredients and stir gently.
  5. Fold in the cherries carefully.
  6. Combine brown sugar, flour, oats, softened butter, and cinnamon in a separate bowl for the streusel.
  7. Fill the muffin cups about two-thirds full with batter and sprinkle streusel on top.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Allow the muffins to cool before transferring to a wire rack.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free blend. To customize, try adding chocolate chips or using different fruits.
