Instructions
- Bloom gelatin by sprinkling it over warm water and letting it sit for about 5 minutes.

- Whip heavy cream in a bowl until soft peaks form.
- Beat egg whites with a pinch of salt until soft peaks form; gradually add sugar and continue beating until stiff peaks form.
- Fold the whipped cream into the dulce de leche mixture until just combined.
- Gently fold in the beaten egg whites to retain volume.
- Incorporate the bloomed gelatin into the mixture until evenly distributed.
- Chill the mousse in serving cups or bowls for at least 2 hours.
- Garnish with whipped cream, a drizzle of dulce de leche, and a sprinkle of sea salt before serving.
