Description

A refreshing Cucumber Strawberry Salad that combines juicy strawberries, crisp cucumbers, and creamy feta in a zesty lemon dressing.


Ingredients

  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 2 tbsp chopped fresh mint or basil
  • 2 tbsp slivered almonds, sunflower seeds, or walnuts (toasted, optional)
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Wash and dry strawberries and cucumbers thoroughly. Hull and slice the strawberries, and slice the cucumbers into thin rounds.
  2. Whisk together lemon juice, honey, olive oil, salt, and pepper in a small bowl.
  3. Combine cucumbers, strawberries, herbs, and cheese (if using) in a large mixing bowl.
  4. Drizzle half of the dressing over the mixture and gently toss.
  5. Transfer to a serving platter and garnish with nuts/seeds and remaining dressing. Serve immediately.

Notes

For the freshest salad, prep just before serving to keep the ingredients crisp. Avoid using overly ripe strawberries to maintain texture.
