A refreshing Cucumber Strawberry Salad that combines juicy strawberries, crisp cucumbers, and creamy feta in a zesty lemon dressing.
Ingredients

- 1 cup strawberries, hulled and sliced
- 1 large English cucumber, thinly sliced
- 1/4 cup crumbled feta or goat cheese (optional)
- 2 tbsp chopped fresh mint or basil
- 2 tbsp slivered almonds, sunflower seeds, or walnuts (toasted, optional)
- 1 tbsp fresh lemon juice or balsamic vinegar
- 1 tsp honey or maple syrup
- 2 tbsp olive oil
- Salt and black pepper, to taste
Instructions
- Wash and dry strawberries and cucumbers thoroughly. Hull and slice the strawberries, and slice the cucumbers into thin rounds.
- Whisk together lemon juice, honey, olive oil, salt, and pepper in a small bowl.
- Combine cucumbers, strawberries, herbs, and cheese (if using) in a large mixing bowl.
- Drizzle half of the dressing over the mixture and gently toss.
- Transfer to a serving platter and garnish with nuts/seeds and remaining dressing. Serve immediately.
Notes
For the freshest salad, prep just before serving to keep the ingredients crisp. Avoid using overly ripe strawberries to maintain texture.
