- 2 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat.
- Add the chicken and cook for about 6–7 minutes per side until juices run clear. Remove and let rest.
- Slice the chicken thinly after it cools slightly.
- Slice the avocado and prepare the cheese.
- Spread mayonnaise and Dijon mustard on one side of each bread slice.
- On two slices of bread, layer the chicken, avocado, cheese, onion, and tomato. Top with remaining slices.
- Heat butter or olive oil in the skillet and grill the sandwiches for 3–4 minutes each side until golden and melty.
- Remove from the skillet, let cool briefly, slice, and serve warm.
Notes
Customize with extra toppings like arugula or balsamic reduction. Use a meat thermometer for perfectly cooked chicken.
