Description

A comforting sandwich featuring tender chicken, creamy avocado, and melty cheese, perfect for any occasion.


Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat.
  2. Add the chicken and cook for about 6–7 minutes per side until juices run clear. Remove and let rest.
  3. Slice the chicken thinly after it cools slightly.
  4. Slice the avocado and prepare the cheese.
  5. Spread mayonnaise and Dijon mustard on one side of each bread slice.
  6. On two slices of bread, layer the chicken, avocado, cheese, onion, and tomato. Top with remaining slices.
  7. Heat butter or olive oil in the skillet and grill the sandwiches for 3–4 minutes each side until golden and melty.
  8. Remove from the skillet, let cool briefly, slice, and serve warm.

Notes

Customize with extra toppings like arugula or balsamic reduction. Use a meat thermometer for perfectly cooked chicken.
