Description

Delicious cherry cobbler muffins that combine the classic flavors of a cobbler in a portable muffin form, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh cherries, chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare your muffin tin by lightly greasing or lining it with muffin cups.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, and baking powder until well combined.
  3. Blend wet ingredients: In a separate bowl, whisk together the melted butter, beaten eggs, and vanilla extract until smooth.
  4. Combine ingredients: Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined.
  5. Add cherries: Gently fold in the chopped cherries, taking care not to mash them.
  6. Fill muffin cups: Spoon the batter into your prepared muffin tin, filling each cup about three-quarters full.
