Description

Deliciously fluffy muffins combine sweet cherries with a crumbly topping, perfect for breakfast or a snack.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped cherries (fresh or frozen)
  • ¼ cup all-purpose flour (for topping)
  • ¼ cup brown sugar
  • 2 tablespoons unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. Whisk together 1 ½ cups flour, ½ cup sugar, 2 teaspoons baking powder, ½ teaspoon baking soda, and ¼ teaspoon salt in a large mixing bowl until combined.
  3. Mix together ½ cup melted butter, ¾ cup buttermilk, 1 egg, and 1 teaspoon vanilla extract in a separate bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in 1 cup chopped cherries with a gentle touch.
  6. Fill each muffin cup about ¾ full with batter.
  7. Mix ¼ cup flour and ¼ cup brown sugar in a small bowl for the topping, then add 2 tablespoons cold, cubed butter and mix until crumbly.
  8. Sprinkle the crumb topping generously over each muffin.
  9. Bake for 18–22 minutes or until a toothpick comes out clean.
  10. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.

Notes

These muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days.
