Description

Delightful cookies that combine the classic chocolate chip experience with a creamy cheesecake filling, perfect for any occasion.


Ingredients

  • 8 oz Cream Cheese
  • 1/3 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Unsalted Butter
  • 3/4 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 large Egg
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Chocolate Chips

Instructions

  1. Combine the cream cheese, powdered sugar, and vanilla extract in a mixing bowl and blend until smooth.
  2. Spoon out the mixture onto parchment paper, shaping discs and freeze for 30 minutes.
  3. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add in the egg and vanilla extract, mixing until fully incorporated.
  5. Whisk together the flour, baking soda, and salt in a separate bowl, then gradually add to the wet ingredients.
  6. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
  7. Preheat the oven to 350°F (175°C).
  8. Scoop a portion of dough, flatten it, add a cheesecake disc in the center, and seal it.
  9. Place the stuffed cookies on a baking sheet and bake for 10-12 minutes.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best results, chill the dough before baking and feel free to customize with nuts or spices.
