- 8 oz Cream Cheese
- 1/3 cup Powdered Sugar
- 1 teaspoon Vanilla Extract
- 1 cup Unsalted Butter
- 3/4 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 1 large Egg
- 2 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 cup Chocolate Chips
Instructions
- Combine the cream cheese, powdered sugar, and vanilla extract in a mixing bowl and blend until smooth.
- Spoon out the mixture onto parchment paper, shaping discs and freeze for 30 minutes.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing until fully incorporated.
- Whisk together the flour, baking soda, and salt in a separate bowl, then gradually add to the wet ingredients.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- Scoop a portion of dough, flatten it, add a cheesecake disc in the center, and seal it.
- Place the stuffed cookies on a baking sheet and bake for 10-12 minutes.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For best results, chill the dough before baking and feel free to customize with nuts or spices.
