Description

These buttery cheese garlic rolls are a warm and inviting treat, perfect for family gatherings or cozy evenings, offering a delightful experience with each bite.


Ingredients

  • 1 head of garlic
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter (softened)
  • 1 tablespoon fresh parsley (chopped)
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter (for filling)
  • 2 egg yolks
  • 1 ½ teaspoons salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese (shredded)
  • Garlic butter (from roasted garlic)
  • 1 egg (for egg wash)

Instructions

  1. Roast the garlic by cutting the top off a head of garlic, drizzling with olive oil, and wrapping in aluminum foil. Roast at 160°C (320°F) for about 2 hours.
  2. Prepare the garlic butter by blending roasted garlic with softened butter, chopped parsley, and garlic oil. Set aside.
  3. Create the yeast mixture by combining warm milk, active dry yeast, and honey. Let sit for about 10 minutes until frothy.
  4. Make the dough by mixing all-purpose flour, bread flour, sugar, milk powder, softened butter, salt, and the yeast mixture until shaggy.
  5. Knead the dough with a dough hook attachment for 15-20 minutes until smooth and elastic.
  6. Allow the dough to proof in a warm spot until doubled in size, about 1 hour and 30 minutes.
  7. Roll out the dough on a floured surface and spread garlic butter evenly over it.
  8. Sprinkle mozzarella cheese over the garlic buttered dough, then roll tightly into a log.
  9. Cut the rolled dough into 6 equal portions using a sharp knife or dental floss.
  10. Second proof the rolls on a baking sheet for another 30 minutes.
  11. Bake in a preheated oven at 175°C (350°F) for 20-25 minutes, brushing with egg wash for a golden finish.
  12. Brush with leftover garlic butter, sprinkle with parsley, and serve.

Notes

Make the garlic butter ahead of time for convenience. These rolls can also be baked in an air fryer. Store leftovers in an airtight container.
