Description

These Boston Cream Pie Cookies combine the classic flavors of a Boston Cream Pie into a delightful cookie form, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 cup milk
  • 1 cup heavy cream
  • 1 cup chocolate glaze

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the butter and sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Combine the flour and baking powder in a separate bowl, then gradually add to the butter mixture, alternating with the milk.
  5. Scoop even portions of dough onto a lined baking sheet, leaving space for spreading.
  6. Bake for 10-12 minutes until edges are lightly golden.
  7. Cool the cookies before adding a generous spoonful of whipped cream between two cookies.
  8. Dip the filled cookies in melted chocolate glaze or drizzle over the top.
  9. Allow to set before serving.
